Cheesy Chicken and Rice Casserole

Preheat oven to:  375 degrees                         Cook time:  45 min-1 hr

     -  1 can Cream of Chicken soup
     -  1 1/3 c. water
     -  3/4 c. uncooked long grain white rice
     -  2 c. fresh or frozen mixed veggies
     -  1/2 tsp. onion powder
     -  4 skinless, boneless chicken breasts (halved)
     -  1/2 c. shredded cheddar
     -  Salt, pepper or other favorite seasonings to taste

1)  Stir soup, water, rice, vegs and onion powder in shallow baking dish.  Top with chicken (seasoned as desired)
2)  Cover and bake at 375 degrees for 45 minutes
3)  Top with cheese and broil for a couple of minutes.
